Recently, at a family gathering, I was having a conversation with my grandnephew, a restauranteur and executive chef in Seattle, Washington. He had recently opened a new restaurant, and although he found the venture rewarding, he was somewhat disillusioned with how competitive and cutthroat the eatery industry had become.
